Rice Cooker Apple Cake (with Pancake Mix)
- 2 small Apples
- 200 grams Pancake mix
- 150 ml Milk
- 3 tbsp Sugar (to boil the apples)
- 1 tbsp Sugar (for baking)
- 1 tbsp Butter
- 3 tbsp Brandy (or Rum)
- 10 drops Vanilla extract
- 1 Cinnamon powder
- Leave the skin on one of the apples and cut into thin slices.
- Peel the other apple and cut into 2-3 cm pieces (any shape is fine).
- Add the apples, brandy, and sugar to a pot and turn on the heat.
- When the apples have become tender, boil until the liquid evaporates.
- Let cool.
- Add 1 tablespoon of butter and the sugar into the rice cooker and switch it on!
- When the butter has melted, mix it into the sugar.
- Remove the rice cooker bowl and while it's cooling, swirl it around to coat the sides with the butter.
- Spread the apples with the skin on the bottom of the rice cooker pot until they reach about halfway up the sides.
- In a bowl, mix together the pancake mix, milk, and egg.
- Mix the boiled skinned apples to Step 8.
- Pour into Step 7, turn on the switch, and then wait.
- When it has finished baking (or steaming), insert a skewer.
- If it comes out with batter sticking to it, turn on the rice cooker again.
- It's finished once the skewer comes out clean!
- Flip over the rice cooker pot to remove the cake.
