Crushed Ice Cake (Stained Glass Cake)

  1. Make jello; set in pie plates.
  2. Heat pineapple/juice.
  3. Mix unflavoured gelatin with cold water; add to juice.
  4. Set aside to cool, stirring occasionally, until the mixture has the consistency of egg whites.
  5. Melt butter; add to graham crumbs and brown sugar.
  6. Press into 9x13 pan, reserving 1/4 cup crumb mixture for the top.
  7. Cut jello into cubes in the pan and place pans in fridge.
  8. Beat cream until thick; beat in 1/2 cup white sugar and 1 tsp vanilla.
  9. Carefully combine jello with juice mixture (a spatula usually scoops the jello out well.
  10. ).
  11. Fold in whipped cream.
  12. Spread mixture over crust and sprinkle reserved graham crumbs on top.
  13. Let set in fridge.
