Fillet Steak With Red Wine, Chilli and Parmesan
- 4 (150 g) steak fillets, cut through to make eight slices
- 30 g butter
- 1 tablespoon olive oil
- 12 cup red wine
- 1 red chile, finely sliced
- 14 cup parsley, leaves finely chopped
- 100 g fresh parmesan cheese, finely shaved
- salt
- black pepper, freshly ground
- potato, mashed
- Season steak well.
- Heat butter and oil in pan and cook steak as desired.
- Remove and keep warm.
- Add wine and collect all tasty bits of steak left in the pan.
- Plate the mash, top with steaks, spoon over the wine sauce, scatter with chilli, parmesan and parsley.
