Quick Sauteed Beans and Tomatoes
- 2 tbsp. olive oil
- 2 clove garlic
- 1 pt. small cherry or grape tomatoes
- 1/2 sprig fresh rosemary
- 1/4 c. dry white wine
- 1 can cannellini beans
- kosher salt
- Pepper
- 1/4 c. chopped fresh flat-leaf parsley
- Heat the oil in a large skillet over medium heat.
- Add the garlic and cook, stirring occasionally, until beginning to brown, about 2 minutes.
- Add the tomatoes and rosemary and cook, stirring, for 1 minute.
- Add the wine and bring to a simmer.
- Stir in the beans and 1/2 teaspoon each salt and pepper and cook until heated through, about 1 minute more.
- Toss with the parsley.
