Zucchini Muffins
- 14 cup oil
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 2 12 cups flour
- 1 12 teaspoons baking soda
- 1 12 teaspoons baking powder
- 2 teaspoons cinnamon
- 12 teaspoon clove
- 12 teaspoon ginger
- 1 12 cups Splenda sugar substitute
- 4 peaches
- 2 bananas
- 14 cup pecans
- 1 12 cups zucchini (shredded)
- 12 cup soymilk
- blend the peaches and bananas then mix everything well.
- cook 375 for 12-15 minutes in mini muffin pans --make sure they're sprayed w/ non-stick stuff.
- sprinkle a little cinnamon on top if you like after they are done.
