Potato Cakes

  1. Beat eggs until fluffy.
  2. Stir in milk, potatoes, baking mix and salt.
  3. Melt butter in skillet.
  4. Drop dough by tablespoonfuls into skillet.
  5. Cook until golden brown on both sides (about 3 minutes on each side).
