Fresh Apple Cake

  1. Mix the oil, sugar and eggs in a mixing bowl.
  2. In a separate bowl, sift the flour, salt, soda and cinnamon.
  3. Gradually add the flour mixture to the oil mixture; mix thorougly.
  4. Stir in the apples, nuts and flavoring.
  5. Prepare the pan(s) by completely greasing the sides and bottom with a solid vegetable shortening, then lightly dusting the bottom and sides with flour.
  6. Pour the cake into the pan(s).
  7. Bake at 350 degrees (175 C.) for approximately 60 minutes (check on it at 50 minutes).
  8. When you stick a toothpick in the center of the cake and it comes out clean and it comes out clean the cake is done.
  9. Cool completely in the pan on a wire rack.
  10. Remove from pan and spread with cream cheese icing.
  11. Beat the butter and cream cheese together until light in color.
  12. Blend in powdered sugar, vanilla flavoring and nuts.
  13. Ice the cake to suit yourself.
