Asparagus Appetizer Spread Recipe
- 1 lb Fresh asparagus, trimmed
- 12 ounce Light lowfat sour cream, divided
- 8 ounce Light cream cheese, softened
- 1 env unflavored gelatin
- 1 c. Low-fat ham, fully cooked, finely minced
- 1 Tbsp. Chives, minced
- 1/8 tsp Pepper Additional ham and asparagus, optional Assorted reduce-fat crackers
- Enjoy these.
- Cook asparagus in a small amount of water till tender.
- Drain, reserving 1/4 c. liquid.
- Cold.
- Puree asparagus till smooth.
- Add in 1 c. lowfat sour cream and the cream cheese; blend well.
- In a saucepan, combine gelatin and reserved liquid; heat slowly till the gelatin is dissolved.
- Remove from the heat; stir in the asparagus mix, ham, chives and pepper.
- Pour into a 1-qt round-bottom bowl coated with nonstick cooking spray.
- Cover and refrigeratetill set, about 6 hrs.
- Unmold onto a plate and spread with reserved lowfat sour cream.
- Garnish with additional ham and asparagus if you like.
- Serve with crackers.
- Serving Size: 1/8 recipe
- NOTES : the first time I made this spread was for a potluck get-together.
