Cod with Cabbage

  1. In nonstick 12-inch skillet, cook bacon over medium heat until browned, about 5 minutes, stirring frequently.
  2. With slotted spoon, transfer bacon to paper towels to drain.
  3. Discard all but 2 teaspoons bacon fat from skillet.
  4. To same skillet, add cabbage, thyme, 1/4 teaspoon salt, 1/8 teaspoon pepper, and 2 tablespoons water.
  5. Cook over medium-high heat 5 to 8 minutes or until cabbage is wilted, stirring frequently.
  6. Stir in bacon.

  8. Top cabbage mixture with cod fillets.
  9. Sprinkle cod with remaining 1/4 teaspoon salt and 1/8 teaspoon pepper.
  10. Cover skillet and cook over medium heat 10 to 12 minutes or until cod is opaque throughout.
