Cheese and Apple Soup

  1. Melt butter in large soup pot or saucepan over medium heat.
  2. Saute onion until very soft and a golden color - a few minutes will do.
  3. Whisk in flour and salt.
  4. Gradually stir in milk and half-n-half; stirring constantly until thickened.
  5. Gradually add cheese; stir until melted and combined.
  6. Whisk in juice; heat thoroughly, gently stirring, over low heat, careful not to boil.
  7. Serve at once and enjoy!
