Banana Jam (Jamaican) Recipe
- 3 lb ripe banana mashed
- 1 1/2 lb sugar
- 1/2 c. lime juice
- 1 1/2 tsp almond extract
- Mix all ingredients together.
- Bake in warm oven for 1 hour.
- Allow to cold.
- Use as desired.
- Zosha's note: This appears to be used as a refrigerator jam, I do not see why you couldn't process in a boiling water bath.
- Unfortunately, no yeild is listed.
- I would put the almond extract in last after the cooking process.
