Banana Apricot Tea Bread Recipe
- 1 3/4 c. sifted all purpose flour
- 2 tsp baking pwdr
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/3 c. soft shortening
- 2/3 c. sugar
- 2 x Large eggs, unbeaten
- 1 c. mashed bananas
- 1 c. finely minced, dry apricots
- Heat oven to 350*.
- Grease a 9X5X3 inch loaf pan.
- Sift flour, baking pwdr, baking soda, and salt.
- With a spoon, thoroughly mix shortening w/ sugar.
- Add in Large eggs and beat together till mix is ligth and fluffy.
- Beat in flour w/ bananas and apricots till smotth and creamy.
- Pour into pan and bake for 1 hour.
- Cold inpan for 10 mins and remove.
