Crunchy Sweet Potato Fries

  1. Heat oven to 425 degrees F.
  2. Cut 1/4-inch-thick slice off top of garlic; discard.
  3. Place garlic, cut-side up, on 6-inch-square piece of foil; drizzle with 1 tsp.

  5. Wrap garlic in foil.
  6. Cover 2 rimmed baking sheets with additional foil; drizzle evenly with remaining oil.
  7. Cut potatoes lengthwise into 1/4-inch-thick matchlike sticks.
  8. Whisk egg in large bowl.
  9. Add potatoes; toss to coat.
  10. Add, in batches, to coating mix in separate bowl; toss to coat.
  11. Spread evenly onto prepared baking sheets.
  12. Bake potatoes and garlic 25 to 35 min.
  13. or until potatoes are crisp-tender and golden brown, turning potatoes every 10 min.
  14. Cool 2 min.
  15. Unwrap garlic; carefully squeeze garlic cloves into small bowl.
  16. Add mayo; mix well.
  17. Serve with potatoes.
