Caviar Potato Chips and Lemon Cream

• 1/4 cup creme fraiche or sour cream
• 3/4 teaspoon finely grated lemon zest
• 4 ounces Salmon roe or other caviar
• Potato chips

1. In a small bowl, whisk together creme fraiche and zest.
2. Top each potato chip with a small dollop of creme fraiche and a spoonful of caviar.
