Carne guisada

• 2 1/2 lb chuck roast
• 4 tbsp flour
• 2 tbsp olive oil
• 1 large onion, chopped
• 2 clove garlic, chopped
• 2 jalapeno seeded and minced
• 3 cup beef stock
• 2 tbsp tomato paste
• 4 tsp ground cumin
• 1 tsp chili powder

1. Preheat oven to 350
2. Toss meat pieces with flour.
3. Brown in oil in an oven safe dutch oven
4. Add all ingredients and bring to a simmer on the stove.
5. Cover dutch oven place in preheated oven, baking for about 2 - 2 1\ hours, until meat is extremely tender.
6. Serve as is or on rice
