Sunbeam Chicken Fricassee

  1. Cut up chicken.
  2. Dip pieces in flour.
  3. Preheat frypan to 360F.
  4. Place cover in spatter shield position; add fat (or render chicken fat to make this amount).
  5. Brown all pieces, turning as necessary and removing pieces as they brown.
  6. When all is browned, spoon off fat.
  7. Place browned chicken in frypan, meaty side down.
  8. Season with salt, pepper, and poultry seasoning if desired.
  9. Add water* slowly.
  10. Add onion, celery and mushrooms.
  11. When liquid is boiling, turn dial to about 220F.
  12. Cover.
  13. Simmer 3 to 4 hours until larger pieces of chicken are tender.
  14. Taste gravy; add more seasoning and a dash of yellow food coloring, if desired.
  15. Sprinkle with finely chopped parsley.
