Chilly Day Chili Con Carne

  1. Heat the oil in a large saute pan to medium high.
  2. Add the chopped onion and garlic and fry gently until softened and golden.
  3. Add the minced beef and fry, stirring, for 10-15 minutes, or until browned.
  4. Add the tomato puree, chilli and spices and fry for a further 5 minutes.
  5. Now add the chicken stock, tomatoes and chocolate, and season with salt and pepper to taste.
  6. Bring to a boil,
  7. place cover on and simmer for 30 minutes until the meat is tender.
  8. Transfer the meat to a bowl with a slotted spoon, leaving the juices in the pan.
  9. Add the kidney beans to the meat.
  10. Bring the juices to a boil and reduce by about half.
  11. Skim off any fat.
  12. Pour over the meat, mixing well.
  13. Season and serve.
