Blueberry Lemon Squares Recipe
- 2 c. all-purpose flour
- 1/2 c. plus 1 Tbsp. sugar
- 1 Tbsp. making pwdr
- 1/2 tsp salt
- 1 c. fresh or possibly frzn blueberries (don't thaw)
- 1 c. lowfat milk
- 1/4 c. butter, melted
- 1 lrg egg
- 1/2 tsp grated lemon peel
- Preheat oven to 425 F. Grease 13x9-inch baking pan.
- In medium bowl, stir flour, 1/2 c. sugar and the baking pwdr and salt.
- Add in blueberries and toss to coat.
- In medium bowl whisk lowfat milk, butter, egg and lemon peel.
- Stir into dry ingredients till just combined.
- Spread in prepared pan.
- Sprinkle with remaining 1 Tbsp.
- sugar.
- Bake 20 min.
- Cut into 3-inch squares.
- Makes 1 dozen.
