Spiced Pork With Shiitake Relish

  1. Rub pork all over with lemon juice.
  2. Combine the brown sugar, cocoa, chicli powder, lime zest, cumin, cinnamon and salt.
  3. Rub all over pork.
  4. Let stand 2 hours.
  5. Heat oven 400.
  6. Heat a little oil in a large skillet.
  7. Brown pork slices on both sides.
  8. Place in oven for 10 minutes.
  9. Meanwhile, heat 3 tablespoons oil in a wok.
  10. Add the onion, garlic and jalapenos.
  11. Saute 2 minutes.
  12. Add mushrooms.
  13. Saute 5 minutes.
  14. Add tomatoes.
  15. Saute until dry.
  16. Stir in the herbs, balsamic, lemon juice, salt and pepper.
  17. Place on plates.
  18. Top with pork slices.
