Stuffed Pattipan Squash
- 1 large pattipan squash
- 1 red onion
- 1 large poblano pepper
- 1 large clove of elephant garlic
- 12 oz peeled deveined shrimp tail off
- 4 tbsp butter
- 10 oz shredded sharp cheddar cheese
- 8 oz sliced portabella mushrooms
- preheat oven to 375F
- chop pepper and onions garlic and mushrooms to small pieces
- melt butter in large frypan and saute all the chopped veggies till tender
- cut the top off of your squash and hollow it out to make a nice bowl
- when veggies are soft salt and pepper to taste then toss in the shrimp and stir them in really well turn off the burner and let them sit
- spoon your mixture into the squash bowl till it almost fills the bowl
- top with shredded cheddar cheese and bake for 45 to 55 minutes
- enjoy and heat hearty
