Coconut-Pecan Pudding Cake
- 1 pkg. (2-layer size) white or yellow cake mix
- 1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding
- 1-1/3 cups water
- 4 eggs
- 1/4 cup oil
- 1-1/3 cups BAKER'S ANGEL FLAKE Coconut
- 1 cup chopped PLANTERS Pecans or Walnuts
- Heat oven to 350F.
- Beat cake mix, pudding mix, water, eggs and oil in large bowl with electric mixer on low speed just until blended.
- Beat on medium speed 4 minutes.
- Stir in coconut and pecans.
- Pour evenly into 3 greased and floured 9-inch round cake pans.
- Bake 35 min.
- or until toothpick inserted in centers comes out clean and cakes begins to pull away from sides of pans.
- (Do not underbake.)
- Cool 15 min.
- ; remove from pans.
- Cool completely on wire racks.
- Fill and frost as desired.
- Garnish with toasted coconut or additional chopped pecans, if desired.
