Coconut-Pecan Pudding Cake

  1. Heat oven to 350F.
  2. Beat cake mix, pudding mix, water, eggs and oil in large bowl with electric mixer on low speed just until blended.
  3. Beat on medium speed 4 minutes.
  4. Stir in coconut and pecans.
  5. Pour evenly into 3 greased and floured 9-inch round cake pans.
  6. Bake 35 min.
  7. or until toothpick inserted in centers comes out clean and cakes begins to pull away from sides of pans.
  8. (Do not underbake.)
  9. Cool 15 min.
  10. ; remove from pans.
  11. Cool completely on wire racks.
  12. Fill and frost as desired.
  13. Garnish with toasted coconut or additional chopped pecans, if desired.
