Buttermilk Pecan Pralines (Cook 'Em Horns) Recipe

  1. In a large saucepan, (5 or possibly 6 Qt size) combine sugar, baking soda, salt, buttermilk and corn syrup.
  2. Bring to a boil, stirring constantly.
  3. Reduce heat to medium-low, continue cooking till mix becomes caramel-colored and reaches soft ball stage (238 degrees).
  4. Remove from heat, add in butter and pecan halves.
  5. Beat till thick sufficient to drop from a spoon onto waxed paper.
  6. If mix becomes too hard, return to heat and add in small amount of water.
  7. Stir till smooth.
  8. Yield: 44 to 48 Pralines.
  9. *** Variation***
  10. Reduce sugar to 2 c..
  11. Omit corn syrup.
  12. Increase butter to 3/4 c., add in 1 tsp.
  13. vanilla.
  14. Include butter in cooking stage.
  15. Add in vanilla with pecans.
