Gluten-Free Turkey Roll

  1. Cook carrots and onion in boiling water until tender crisp; drain and let cool.
  2. Measure next 8 inngredients into bowl; stir.
  3. Add turkey and mix.
  4. Pat mixture out onwaxed paper into a rectangle.
  5. Lay carrot sticks parallel to short side of rectangle, spreading over entire surface; scatter onion overtop.
  6. Roll from short side, using wax paper to help roll.
  7. Place seam side down in a greased loaf pan.
  8. Bake, uncovered, in a preheated 350* oven for about 1 hour until browned.
  9. Enjoy!
