Ground Peanut Stew

  1. In a large saucepan brown chicken pieces in hot oil about 15 minutes; remove from pan.
  2. Set aside, reserving drippings.
  3. Add beef, onions and green pepper; cook until beef is brown and onions tender.
  4. Drain and stir in undrained tomatoes, salt and pepper. Bring to boiling; reduce heat.
  5. Cover and simmer 30 minutes.
  6. Add chicken; simmer 20 minutes.
  7. In small saucepan melt peanut butter over low heat.
  8. Stir into chicken mixture.
  9. Return mixture to boiling; reduce heat.
  10. Cover and simmer 20 minutes more.
  11. Skim off fat.
  12. Serve with mashed sweet potatoes or hot cooked rice.
  13. Makes 8 to 10 servings.
