Cajun-Style Smoked Turkey

  1. Clean turkey and coat with EVOO.
  2. Rub liberally above and beneath skin with spices to coat.
  3. Allow to sit for 3 hours.
  4. Preheat oven to 325F.
  5. Fill bottom of stovetop smoker with 1 cup of apple wood chips.
  6. Place rubbed turkey on small baking rack over wood chips.
  7. Cover smoker tightly with heavy-duty aluminum foil.
  8. Place smoker on stove over medium heat for 15-20 minutes.
  9. Remove smoker from stove and place directly into oven.
  10. Bake at 325F for 4.5 hours.
  11. Remove foil cover and bake uncovered for additional 1 hour.
  12. When cooked through, remove from oven and let rest for 15 minutes before carving.
