Curry Meat Stuffed Pita Recipe
- 1 lg. cucumber, peeled, seeded and diced
- 1/4 c. sweet onion, chopped
- 1 canned whole green chili, chopped
- 2 tbsp. minced parsley
- 2 tbsp. fresh lime juice
- 1/4 teaspoon salt
- 1/2 c. chutney
- In bowl, combine all ingredients for relish except chutney; set aside.
- Makes 1 1/2 c. of relish.
- Combine first 8 ingredients for meatballs.
- Shape into 1 inch balls and flatten slightly.
- Makes 20 meatballs.
- In large skillet, heat salad oil over medium heat.
- Add in meatballs and cook for 4 min each side, shaking pan occasionally to keep meat from sticking.
- To serve, stuff 3-4 meatballs into PITA BREAD.
- Add in relish and chutney.
- Makes 5 servings.
