Rise-And-Shine Refrigerator Muffins
- 1 c. flour
- 3/4 c. unprocessed wheat bran
- 1/2 c. whole wheat flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 2 beaten eggs
- 1 c. milk
- 1/3 c. packed brown sugar
- 1/3 c. cooking oil
- 1/3 c. raisins or chopped dates
- 1/3 c. nuts (can be omitted)
- In large bowl, stir together first 7 ingredients.
- Make a well in the center.
- In medium bowl, combine eggs, milk, sugar and oil. Add all at once to flour mixture, stirring just until moistened (batter should be thick and lumpy).
- Fold in raisins or dates and nuts.
- Use batter immediately or store in a covered container in refrigerator up to 5 days.
