Grilled duck breast with red currant sauce
- 6 whole duck breasts
- 1 MARINADE
- 2 tbsp soy sauce
- 1/2 tsp dry mustard
- 1 tbsp Worcestershire sauce
- 1/4 tsp garlic powder
- 3/4 cup dry red wine, l like to use a GOOD zinfandel.
- 1 RED CURRANT SAUCE
- 4 tbsp unsalted butter
- 1 10 oz. jar of red currant jelly
- 1/4 cup ketchup
- 1/4 cup brown sugar, packed
- remove meat from both sides of breast bone
- remove skin and tendons
- in large bowl, combine marinade ingredients
- add the duck, turning to coat all sides and let it marinade in refrigerator overnight
- then melt butter in small sauce pan.
- stir in the currant jelly, ketchup, and brown sugar.
- heat mixture until jelly melts and mixture boils, but not for long.
- grill breasts for 5 min.
- per side over medium hot coals.
- meat should be rare to medium rare.
- carve into 1/4" slices, cutting across the grain.
- serve with red currant sauce spooned over the duck!
