Poached Salmon With Redwine Butter Sauce & Fresh Basil Recipe

  1. Cut the salmon filet into 8 pcs.
  2. Poach in water for 5 min.
  3. while the salmon is cooking, prepare the sauce.
  4. In a saucepan, add in the red wine, shallots and vinegar.
  5. Bring to a boil.
  6. Reduce to almost 1/4 of its volume and add in the cream.
  7. Bring to a boil for a few seconds.
  8. Whip in the butter piece by piece till the sauce is smooth.
  9. Add in lemon juice and minced basil.
  10. Adjust seasoning.
  11. Pour into a sauce boat.
