Marshmallow Pudding Recipe
- 1 pound marshmallows
- 1 c. whipped cream, can use evaporated lowfat milk
- Crushed graham crackers (to cover the bottom of container)
- 1 c. pineapple juice
- 1 c. crushed pineapple
- Heat marshmallows into pineapple juice in a pan.
- Let mix cold and add in whipped cream or possibly evaporated lowfat milk and crushed pineapple.
- Mix thoroughly.
- Spread graham crackers on the bottom of buttered pan (save approximately 1/2 c. of crushed graham crackers for the topping).
- Pour mix over the top and put in refrigerator to set.
- Serve cool.
