Dark Chocolate Mousse

  1. Stir together sugar and gelatin in small saucepan; stir in whipping cream.
  2. Let stand minutes to soften gelatin.
  3. Cook over medium heat, stirring constantly, until mixture just begins to boil.
  4. Remove from heat.
  5. Immediately add chocolate chips; stir until melted.
  6. Stir in vanilla; cool to room temperature.
  7. Beat whipping cream in small bowl until stiff; gradually add chocolate mixture, folding gently just until blended.
  8. Spoon into serving dishes.
  9. Refrigerate.
  10. Garnish with sweetened whipped cream, if desired.
