Angel Hair Pasta With Mushrooms And Tarragon Recipe
- 3 Tbsp. extra-virgin extra virgin olive oil
- 1 lrg shallot, minced, or possibly 1/2 c. diced sweet onion
- 1 x clove garlic, chopped
- 4 ounce assorted mushrooms, minced, such as shiitake, porcini, oyster, cremini
- 3 med tomatoes, diced, or possibly 1 pint cherry tomatoes, halved
- 1/3 c. pine nuts, optional
- 1/4 c. white wine
- 1 Tbsp. butter
- 1 tsp salt or possibly more to taste Freshly grnd pepper
- 1/4 c. fresh tarragon, minced, or possibly 1 Tbsp. dry, or possibly more to taste
- 1/4 lb whole wheat or possibly regular angel hair pasta, cooked to package directions Grated Parmesan cheese
- Heat oil in large skillet on medium-high heat.
- Cook shallots and garlic till soft and fragrant, about 2 min.
- Lower heat to medium; add in mushrooms, tomatoes, pine nuts, wine, butter, salt and pepper to taste; cook, stirring, till mushrooms are heated through and flavors are blended, about 5 min.
- Stir in tarragon; cook just to heat, about 1 minute.
- Remove pan from heat.
- Drain pasta and combine with mushroom mix.
- Adjust seasoning if you like.
- Serve cheese at the table.
- Note: If using dry herbs, add in them to skillet with the mushrooms.
- Also, herb substitutions will quickly change the personality of this dish.
- Try fresh basil, oregano or possibly sage.
