Insalata Capri Bruschetta

  1. Combine the oil and garlic together in a small bowl.
  2. Set aside.
  3. Place the tomatoes, basil, dried red pepper flakes, provolone cheese, and 2 tablespoons of the olive oil in a medium-size bowl.
  4. Mix well.
  5. Preheat broiler.
  6. Brush one side of the bread slices with the olive oil/garlic mix.
  7. Lightly broil that side.
  8. Turn the pieces over and top with tomato mixture.
  9. Broil until the tomato mixture is hot, and the cheese has melted.
  10. Serve immediately.
