Saffron-Cardamom Rice

  1. Melt 1 teaspoon butter in small skillet over medium heat.
  2. Add pine nuts; saute until golden, about 5 minutes.
  3. Cool.
  4. Melt remaining 2 teaspoons butter in medium saucepan over medium heat.
  5. Add onion and saute until slightly softened, about 5 minutes.
  6. Add rice and stir 2 minutes.
  7. Add 1 1/2 cups water, raisins, sugar, salt, saffron and cardamom.
  8. Bring to boil.
  9. Reduce heat, cover and simmer until rice is tender, about 15 minutes.
  10. Remove from heat; let stand covered 10 minutes.
  11. Stir in pine nuts.
