Bulgur Wheat Stuffed Tomato Recipe
- 1 c. Fine-grain bulgur wheat
- 1 Tbsp. Extra virgin olive oil
- 1/2 c. Minced onions
- 1/2 c. Minced red delicious apple (toss in lemon juice to prevent browning)
- 4 x Beautiful ripe tomatoes hollowed out
- 2 Tbsp. Finely-minced tomato pulp from above
- 1/2 c. Minced parsley
- 1/3 c. Minced walnuts
- 1/4 c. Minced mint
- 2 Tbsp. Lemon juice
- 1 tsp Lemon zest
- 1 1/2 tsp Cumin
- 1 1/2 tsp Coriander Salt to taste Freshly grnd black pepper to taste Greens
- Rinse the bulgur wheat in a sieve and place in a bowl, covered with cold water.
- Let stand for 30 min, drain excess liquid.
- Meanwhile, heat the extra virgin olive oil in a small saute/fry pan, add in the onions and apple and cook for 2 min.
- Hollow out the tomatoes to make room for the salad (reserving 2 Tbsp.
- of the pulp).
- In a large mixing bowl, combine the bulgur wheat, onions, apples, minced tomato innards, and all the remaining ingredients (except greens); blend well.
- Adjust the seasonings.
- Chill overnight and check seasonings before you fill the tomatoes.
- Serve on greens.
- This recipe yields 4 entree salads.
