Insalata Caprese (Or Caprese Salad) With Balsamic Reduction
- 1 pint grape tomatoes, halved
- 8 ounces fresh mozzarella cheese, sliced 1/4-inch thick
- fresh basil, chopped
- 12 cup balsamic vinegar
- 12 tablespoon sugar
- Set out tomatoes and cheese (I like them to be room temperature, just personal preference).
- Stir balsamic vinegar and sugar together in a small, heavy saucepan.
- (I'm sure you could substitute some other form of sweetener, but I've never tried it).
- Bring to boiling over med-high heat; simmer for 10 minutes, stirring occasionally.
- While reducing vinegar, cut up other ingredients and arrange nicely on a plate.
- Drizzle with balsamic reduction.
- Serve immediately and enjoy!
