Veggie Quiche
- 1 tablespoon chopped green pepper
- 1 small onion, chopped
- 1 cup mushroom, chopped
- 1 cup broccoli, chopped (may use frozen)
- 1 cup spinach, chopped
- 6 eggs
- 2 cups cream
- 8 ounces shredded monterey jack cheese
- 8 ounces shredded swiss cheese
- 12 teaspoon vinegar
- 12 teaspoon dried tarragon
- 18 teaspoon garlic powder
- 18 teaspoon ground nutmeg
- 18 teaspoon dried parsley
- 18 teaspoon salt
- 18 teaspoon pepper
- Preheat oven to 350 degrees.
- In large skillet, saute peppers, onions and mushrooms til translucent.
- Remove from heat and set aside.
- In large bowl mix eggs and cream together.
- Stir in shredded cheese, sauteed veggies, broccoli and spinach.
- Stir in vinegar with seasonings.
- Divide into two glass pie pans.
- Bake in oven 55-60 minutes.
