Zucchini Al Forno
- 8 whole Zucchini, Peeled And Thinly Sliced Lengthwise
- 1- 1/2 cup Mozzarella, Sliced Or Shredde
- 8 slices Prosciutto, Bacon Or Turkey
- 3/4 cups Parmesan
- 1/2 cups Bread Crumbs
- 3/4 cups Olive Oil
- Salt To Taste
- Pepper To Taste (optional)
- *Note: Freshly sliced mozzarella is the best bet, but shredded works fine.
- The original recipe calls for prosciutto, but I have used (cooked) bacon and turkey for this recipe and it turned out wonderful!
- This might even be tasty with a dollop of sour cream or mascarpone.
- Preheat oven to 350 F.
- 1.
- Coat a baking dish with olive oil.
- Place the zucchini slices side by side in the baking dish, covering it entirely but not overlapping.

- Sprinkle with salt (and pepper to taste, if you like) and parmesan.
- Situate (or sprinkle, if using shredded) the mozzarella on top, blanketing the zucchini.
- Place the meat of your choice at this time.
- 3.
- Layer with another set of zucchini.
- Season with salt.
- For the crust, mix the remaining parmesan and bread crumbs and spoon on top.

- Drizzle oil on top and bake in the oven for 20 minutes or until crust is golden brown.
