Cajun Egg Drop Soup
- 32 ounces chicken broth
- 1 medium carrot, diced fine
- 1 red bell pepper, seeded diced
- 1 green bell pepper, seeded diced
- 8 ounces frozen corn
- 8 ounces andouille sausages, choppd fine
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 teaspoon cumin
- 2 teaspoons chili powder
- 1 tablespoon chipotle chile in adobo
- 1 teaspoon fresh ground black pepper
- 1 teaspoon fine sea salt
- 6 large eggs
- combine all ingredients except eggs in stock pot simmer 20 minutes.
- ladle into bowls and crack an egg into each bowl.and let set for 2 minutes.
