Taco Casserole
- 1 lb. ground beef
- 1/2 cup chopped onion
- 8 oz. tomato sauce
- 1/3 cup water
- 1 1/4 oz. envelope taco seasoning mix
- 2 eggs
- 1 cup milk
- 16 oz. can red kidney beans, drained
- 1 1/2 cup shredded Monterey Jack Cheese
- 10 taco shells coarsely crushed
- 1 head lettuce
- 1 or 2 tomatoes - diced
- 1/2 cup Monterey Jack Cheese shredded
- In large skillet cook ground beef and onion till beef is brown, drain.
- Stir in tomato sauce, water and taco seasoning mix and heat through.
- Remove from heat.
- Beat eggs, stir in milk.
- Add small amount of tomato sauce mixture to the egg mixture, stirring constantly.
- Return all to skillet.
- Stir in kidney beans, 1 1/2 cup Monterey Jack and the crushed tacos.
- Turn into a 12 by 7 1/2 by 2-inch baking dish.
