South Beach Diet Chicken Nuggets

  1. Cut each breast crosswise into 4 or 5 equal strips.
  2. Smash each piece with the cut side up with your fingers or a meat mallet until 1/2 inch thick.
  3. Marinate the chicken all day or overnight in a pyrex container full of yogurt.
  4. Stir every so often.
  5. For Topping mixture: Combine the oatmeal, wheat bran, wheat germ and chopped walnuts, lemon herb spice, poultry seasoning and salt and put into a shallow pie dish.
  6. Stir to mix.
  7. Preheat oven to 400F (375F if convection oven).
  8. Spray a large cookie sheet with nonstick cooking spray.
  9. Take the yogurt covered pieces of chicken one at a time and roll in the topping mixture.
  10. Place in a single layer on cookie sheet.
  11. Spray the tops of the chicken nuggets with cooking spray.
  12. Bake for 25 minutes or until chicken is cooked through.
  13. The chicken should be crisp and golden on the outside.
  14. Serve immediately.
  15. Leftovers can be refrigerated and rewarmed the next day.
