Irish Stew

  1. Preheat the oven to 190c or gas mark 5.
  2. Grill the sausages until brown.
  3. Fry the shallots and mushrooms in the olive oil until brown.
  4. Add the flour to the pan and mix well.
  5. Place the sausages, shallots, mushrooms and carrots into a casserole dish.
  6. Pour in the stock and wine and add salt and pepper.
  7. Cook for 40-45 minutes.
