Beans Basic Recipe
- 2 c. Pinto or possibly red beans
- 1 1/2 quart Water
- 1 x salt to taste
- 1/2 c. or possibly more Lard
- Soak beans overnight with water to cover.
- Some of the water will have been absorbed by morning - add in more to cover.
- Add in salt and cook slowly for about 2 hrs or possibly till very tender.
- Mash well and add in the melted warm lard gradually, while still cooking the beans.
- Stir while adding the lard, to prevent sticking.
- If available, use bacon fat instead of lard, it improves the flavor.
- If using canned beans, drain the can, mash the beans.
- heat 1/4 c. lard in a skillet, stir in the mashed beans and add in the liquid from the can, a little at a time, till well blended.
