Sloppy Joes
- 3 tablespoons olive oil
- 1 medium onion, finely diced
- 1 medium bell pepper, finely diced
- 1 pound ground beef
- One 15-ounce can diced fire-roasted tomatoes
- One 15-ounce can kidney beans, drained and rinsed
- 1/4 cup tomato paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon brown sugar
- Kosher salt and freshly ground black pepper
- 4 hamburger buns
- Heat the olive oil in a large skillet over medium heat.
- Add the onions and bell peppers and saute until softened, about 10 minutes.
- Add the beef, breaking it up with a wooden spoon, and cook until browned, 3 to 5 minutes.
- Add the tomatoes, beans, tomato paste, vinegar, brown sugar, and some salt and pepper, and cook until slightly thickened, 10 to 15 minutes.
- Serve warm on the hamburger buns.
