Indian spiced wraps
- 1 Raita
- 1 cup plain yougurt
- 1/4 tsp salt
- 1/4 tsp ground cumin
- 1/2 cup pineapple tidbits in juice drained or diced mango
- 1 Wraps
- 2 tsp canola oil
- 1 small onion chopped
- 2 clove garlic minced
- 1/4 tsp salt
- 1/2 tsp curry powder
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1 tbsp fresh gingerroot minced
- 1 can 15 oz chickpeas rinsed and drained
- 1 cup canned crushed tomatoes
- 3 cup fresh baby spinach
- 4 8 inch whole wheat tortillas warmed
- In a small bowl mix the first 4 ingredients for raita and set aside
- for wraps coat a nonstick skillet with canola oil and heat over medium high heat add onion and cook till tinder.stir in ginger, garlic and all seasonings and cook and stir for 1 minute
- stir in chickpeas and tomatoes and bring to a boil then reduce heat and simmer uncovered for 5 to 8 minutes or till slightly thickend stirring occasionally
- place spinach and chickpea mixture near the center of each tortilla and top with some raita.
- Roll up tightly and enjoy
