Strawberry Compote
- 14 cup caster sugar
- 150 g strawberries (fresh or frozen)
- Place sugar an 2 tablespoons of cold water in a small saucepan and stir over low heat until sugar dissolves.
- Increase heat to high and bring mixture to the boil.
- Cook for 3 minutes or until mixture thickens slightly.
- Remove from heat and stir in strawberries.
- Set aside.
