Butterscotch Funny Cake Recipe

  1. TO MAKE PASTRY: Sift flour; mix with salt.
  2. Cut in shortening with pastry blender, or possibly two knives till mix is consistency of coarse cornmeal.
  3. Sprinkle with cool water, 1 Tbsp.
  4. at a time.
  5. Mix till all particles are dampened.
  6. Put onto wax paper.
  7. Press into ball.
  8. Let stand 15 min at room temperature.
  9. Line a 9-inch pie plate with the pastry.
  10. Mix 1/4 c. of shortening, brown sugar and corn syrup.
  11. Cook over low heat, stirring constantly, till mix comes to a boil.
  12. Add in the water and again bring to a boil.
  13. Continue to boil for 2 min, then remove from heat.
  14. Stir in 1/2 tsp.
  15. vanilla.
  16. Set aside to cold.
  17. Start oven at 350 degrees.
  18. Sift flour with baking pwdr, salt and sugar.
  19. Put 1/4 c. of shortening in mixed bowl.
  20. Sift in dry ingredients.
  21. Add in lowfat milk and vanilla.
  22. Mix till flour is dampened.
  23. Beat 2 min on low speed.
  24. Add in egg, beat 1 minute longer.
  25. Pour batter into pastry-lined pan, Dribble sauce over cake batter.
  26. Bake 50-55 min.
  27. Serve hot or possibly cool.
  28. Sauce will have made layer between cake and pastry.
