Mushroom Quinoa Stir Fry
- 4 cloves Garlic
- 1 cup Fresh Flat Leaf Parsley
- 4 whole Medium Onions
- 1/2 pounds Cremini Mushrooms
- 2 Tablespoons Olive Oil
- 3 cups Cooked Quinoa
- 1 Tablespoon Worcestershire Sauce (not If Vegetarian)
- Salt And Pepper, to taste
- 1/2 whole Lemon, Juiced
- 1.
- Peel the garlic.
- Pick the parsley leaves off of the stems.
- Place both in the bowl of a food processor and process until finely chopped.
- Peel and cut the onions into quarters.
- Add them to the food processor and process until finely chopped.
- Dont over-process, or it will become liquid!
- If a few pieces of onion are only roughly chopped, its okay.

- Rinse and slice the mushrooms.

- In a large skillet over medium heat, heat the olive oil.
- Add the persillade (onions/garlic/parsley) and saute for 5 minutes, until it has reduced a bit.
- Add the mushrooms and saute for 5 more minutes, stirring regularly.
- Finally, add the quinoa, Worcestershire sauce (if using), and salt and pepper to taste.
- Stir well and cook for 10 minutes.
- Add the lemon juice at the end, stir well and serve warm.
