Pumpkin Cookies (Gluten Free)

  1. Mix together the sugar and shortening (or butter).
  2. Add the remaining ingredients (minus the icing) and blend until smooth.
  3. Spoon onto a nonstick baking sheet.
  4. Bake at 375 degrees F for 10-12 minutes.
  5. Cool completely before icing.
