Melty Portabella Sandwiches

  1. Gently rinse and clean the mushrooms, pat dry.
  2. Place in a bowl and carefully toss with salt and 1 tbsp oil.
  3. In a large pan, saute the onion in 1/2 tbsp oil over med-high heat 5 minutes.
  4. remove and set aside.
  5. Carefully place the mushrooms in the pan flat side down, (start the toast now).
  6. Fry the mushrooms 2 minutes then gently turn, fry another minute.
  7. Arrange mushrooms into 2 lots roughly the shape of the toast.
  8. Top with cheese and cover in pan cook for 30 seconds.
  9. Slide a spatula under the mound and place on toast.
  10. Top with onions and serve.
